Crispy, garlicky Parmesan-coated potato cubes cooked in an air fryer for a quick and flavorful snack or side dish with golden, cheesy crust and tender inside.

  • 4 medium russet or Yukon gold potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Wash and scrub the potatoes, then pat them completely dry.
  2. Cut the potatoes into uniform ~1-inch cubes.
  3. Whisk together olive oil, garlic powder, onion powder, paprika, salt, and black pepper in a large bowl.
  4. Add the potato cubes to the bowl and toss to coat evenly with the seasoning mixture.
  5. Preheat the air fryer to 400°F (200°C) for 3–5 minutes.
  6. Arrange the seasoned potato cubes in a single layer in the air fryer basket, avoiding crowding.
  7. Air fry at 400°F (200°C) for 15–20 minutes, shaking the basket halfway through, until potatoes are fork-tender and golden.
  8. Sprinkle grated Parmesan over the potatoes and toss gently to coat.
  9. Return the basket to the air fryer and cook an additional 2–3 minutes until the cheese melts and turns golden and bubbly.
  10. Transfer the potatoes to a serving dish and top with chopped fresh parsley if desired; serve immediately.
