Ingredients

Scale
  • 2 teaspoons vegetable oil
  • 1 pound lean ground beef
  • Salt and pepper, to taste
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups chopped green cabbage
  • 2 medium carrots, quartered and sliced
  • 4 cups low-sodium beef broth
  • 3 cans (8 oz. each) tomato sauce
  • ½ cup uncooked white rice
  • 1 bay leaf
  • 3 tablespoons light brown sugar
  • 2 tablespoons fresh chopped parsley

Instructions

  1. Heat the vegetable oil in a Dutch oven or large soup pot over medium-high heat.
  2. Add the ground beef, season with salt and pepper, and cook until nicely browned.
  3. Stir in the diced onion and minced garlic and cook 2 to 3 minutes until the onions soften.
  4. Add the chopped cabbage, sliced carrots, tomato sauce, beef broth, uncooked white rice, bay leaf, and brown sugar; stir to combine.

  6. Remove the bay leaf.
  7. Sprinkle with fresh chopped parsley.

Notes

Brown the beef well over medium-high heat to enhance flavor; drain excess fat if desired., Chop cabbage evenly for consistent cooking; larger chunks hold a bite, smaller pieces soften faster., To avoid mushy rice, consider adding rice halfway through simmering or using par-cooked/instant rice added late., Use low-sodium beef broth and season with salt towards the end to prevent over-salting., Remove bay leaf before serving., To thicken soup, simmer uncovered longer or add cornstarch slurry (1 teaspoon cornstarch + 1 tablespoon cold water) and cook until thickened., Cool soup completely before freezing; portion into flat freezer bags for easy thawing., Serve with crusty or 30-minute dinner rolls for dunking.
