A comforting Italian-American dish combining tender chicken, earthy mushrooms, and a creamy Marsala wine sauce tossed with pasta. Ready in about 30 minutes, it delivers rich flavors perfect for weeknight dinners or special occasions.

  • 8 oz. pasta (such as fettuccine or penne)
  • 2 tablespoons olive oil
  • 1 lb. boneless, skinless chicken breasts, sliced into strips
  • 1 cup mushrooms, sliced (cremini or button)
  • 2 cloves garlic, minced
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground pepper to taste
  • Fresh parsley, chopped for garnish
  • Grated Parmesan cheese (optional)

Instructions

  1. Boil a large pot of salted water, add pasta, and cook according to package directions until al dente; drain and reserve 1/2 cup pasta water.
  2. Heat olive oil in a large skillet over medium-high heat, add sliced chicken, season with salt and pepper, and cook until golden and cooked through (about 5–7 minutes); transfer chicken to plate and set aside.
  3. Add mushrooms to the same skillet and sauté 3–4 minutes until browned and softened.
  4. Stir in minced garlic and cook about 1 minute until fragrant.
  5. Pour Marsala wine into the pan and scrape up browned bits from the bottom; simmer about 2 minutes to reduce.
  6. Add chicken broth, heavy cream, and Italian seasoning and simmer 3–4 minutes until the sauce thickens slightly.
  7. Return cooked chicken to the skillet and add reserved pasta water as needed to adjust sauce consistency.
  8. Add cooked pasta to the skillet and toss to coat, warming through for 1–2 minutes.
  9. Taste and adjust seasoning with additional salt and pepper as needed.
  10. Remove from heat and garnish with chopped parsley and grated Parmesan if desired.
