A healthier, quick-cooking air fryer recipe for breaded chicken breasts that are crispy on the outside and juicy on the inside, ready in under 15 minutes.

  • 2 boneless, skinless chicken breasts (about 56 ounces each) or 4 thinly sliced chicken breast cutlets
  • 2 cups seasoned parmesan breadcrumbs (or make your own: 2 cups breadcrumbs mixed with 1/4 cup grated parmesan, 2 tbsp dried parsley, salt, and pepper)
  • 2 large eggs
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • Olive oil spray (non-aerosol) for extra crispy chicken

Instructions

  1. Pat chicken breasts dry with paper towels.
  2. Slice each breast in half lengthwise to create thinner cutlets (4 pieces total).
  3. Place chicken pieces between plastic wrap and gently pound to even thickness as needed.
  4. Whisk eggs with salt and pepper in a shallow bowl.
  5. Pour breadcrumbs into another shallow bowl, seasoning with parmesan if not already included.
  6. Dip each chicken piece into the egg mixture, then press firmly into the breadcrumb mixture to coat thoroughly.
  7. Preheat air fryer to 390°F (200°C).
  8. Spray air fryer basket lightly with olive oil spray.
  9. Arrange breaded chicken in a single layer in the preheated basket, working in batches if necessary.
  10. Spray the tops of the coated chicken lightly with olive oil spray.
  11. Cook at 390°F for 6–7 minutes.
  12. Flip each piece, spray the other side with olive oil spray, then continue cooking 4–5 minutes more until golden and the internal temperature reaches 165°F (74°C).
  13. Remove chicken and let rest for 5 minutes.
  14. Slice rested chicken before serving.
