  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • 1 cup low-sodium chicken broth
  • 1 cup uncooked long-grain white rice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 4 cups fresh broccoli florets
  • 2 cups shredded sharp cheddar cheese, divided

Instructions

  1. Place the boneless, skinless chicken breasts in the bottom of a 6-quart slow cooker.
  2. In a medium bowl, whisk together the cream of chicken soup, milk, chicken broth, garlic powder, onion powder, and black pepper.
  3. Pour the creamy mixture over the chicken.
  4. Stir in the uncooked long-grain white rice, ensuring it is covered by the liquid.
  5. Cover and cook on LOW for 3–4 hours or on HIGH for 2 hours, until the rice is tender and the chicken is cooked through.
  6. Remove the chicken, shred it with two forks, then stir the shredded chicken back into the slow cooker.
  7. Add the fresh broccoli florets and 1 cup shredded sharp cheddar cheese, cover and cook on HIGH for 20–30 minutes until the broccoli is tender‑crisp.
  8. Turn off the heat and stir in the remaining 1 cup shredded cheddar cheese until melted and creamy.
