A creamy, flavorful slow cooker chicken recipe with sun-dried tomatoes, Parmesan cheese, and fresh basil, perfect for busy weeknights.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts (about four large breasts)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. Pat the chicken breasts dry.
  2. In a small bowl, mix salt, black pepper, garlic powder, and onion powder.
  3. Rub the seasoning evenly over the chicken breasts.
  4. Place the seasoned chicken in the slow cooker.
  5. Scatter minced garlic and chopped sun-dried tomatoes over the chicken.
  6. Pour chicken broth around the chicken (not over the top).
  7. Cover and cook on LOW for 3–4 hours or on HIGH for 2–3 hours, until the chicken is tender.
  8. Shred the chicken in the slow cooker using two forks (or remove to shred, then return to the pot).
  9. Stir in heavy cream and grated Parmesan cheese until the sauce is smooth and creamy.
  10. Turn off the slow cooker, fold in chopped fresh basil, and let rest for 5–10 minutes to thicken. Serve warm.

Notes

For the creamiest sauce, stir the heavy cream and Parmesan in during the last 30 minutes of cooking., Use freshly grated Parmesan to avoid graininess., Chicken thighs can be used instead of breasts; adjust cooking times accordingly., More garlic or swapping sun-dried tomatoes for roasted red peppers can boost flavor., Store leftovers in airtight containers in the fridge for up to 3 days or freeze for up to 3 months., Reheat gently with a splash of broth or cream to keep texture., Plate over pasta, rice, or mashed potatoes for a comforting meal., Dairy-free options include substituting heavy cream with full-fat coconut cream and dairy-free Parmesan alternatives., Add herbs like Italian seasoning or oregano for extra flavor.
