A warm, cozy fall dessert made by baking peeled and cored apples coated with brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch, topped with cold butter and baked until tender and caramelized. Served best with vanilla ice cream and caramel sauce for a comforting, simple treat.

Ingredients

Scale
  • 34 large apples, peeled and cored, about 6 cups (preferably Honeycrisp)
  • 1/3 cup brown sugar
  • 2 tablespoons fresh lemon juice
  • 4 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cornstarch
  • 4 tablespoons cold butter, cubed

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a medium-size baking dish.
  2. Peel, core, and cut 3–4 large apples into 1/2-inch chunks (about 6 cups).
  3. Whisk together brown sugar, fresh lemon juice, ground cinnamon, nutmeg, and cornstarch in a small bowl.
  4. Toss the apple chunks with the brown sugar–spice mixture until evenly coated.
  5. Spread the coated apples in the prepared baking dish and dot the top with cold butter cubes.
  6. Cover the dish tightly with foil.
  7. Bake for 35–40 minutes (or 25–30 minutes if using small individual dishes) until apples are tender and sauce is lightly bubbling.
  8. Carefully remove the foil and stir the apples gently so the butter melts into the sauce.
  9. Taste and adjust seasoning, adding a pinch more cinnamon or sugar if desired.

Notes

Choose apples that hold their shape when baked, such as Honeycrisp, Granny Smith, Fuji, Jonagold, or Braeburn., Cut apples into evenly sized 1/2-inch chunks to ensure uniform baking., Lemon juice prevents browning and adds brightness., Cornstarch thickens the sauce; omit or reduce for a looser sauce., Use cold butter cubes to create a rich, velvety sauce., Optional: Add 1-2 tablespoons of maple syrup or a splash of bourbon for deeper flavor., For individual servings, mini cocottes can be used with shorter bake times (25-30 minutes)., Mix-ins like chopped pecans, walnuts, or dried cranberries can be added before baking., To make vegan, substitute butter with coconut oil or plant-based butter., Stuffed baked apple variation: core whole apples and fill with the spice mixture plus chopped nuts before baking., Store leftovers in an airtight container in the fridge up to 3–4 days., Reheat leftovers in a 350°F oven for 10-15 minutes or microwave 1-2 minutes, adding liquid if sauce thickened., Baked apples freeze well for up to 2 months; thaw overnight and reheat before serving.
