  • 1/4 cup fat-free feta cheese
  • 2 light Laughing Cow cheddar cheese wedges
  • Everything bagel seasoning, to taste
  • 1/2 tsp chili crunch, oil drained
  • Optional: green onions or fresh herbs like parsley or cilantro for garnish

Instructions

  1. Rinse mini sweet peppers and pat dry.
  2. Slice each pepper lengthwise and remove seeds and white ribs so halves lie flat.
  3. Drain oil from the chili crunch, reserving about 1/2 teaspoon of crunchy bits (optionally keep a bit of oil).
  4. Stir together fat-free feta and Laughing Cow cheddar wedges in a small bowl.
  5. Microwave the cheese mixture 20–30 seconds to soften, then stir or mash until smooth (or let soften at room temperature and mash).
  6. Add everything bagel seasoning and the drained chili crunch; fold until evenly distributed and taste to adjust seasoning.
  7. Fill each pepper half with the cheese mixture using a spoon or piping bag, avoiding overfilling.
  8. Arrange stuffed peppers on a serving dish and garnish with chopped green onions or fresh herbs, if desired.
  9. Optional: For warm, melty peppers, broil 1–2 minutes watching carefully or bake at 350°F (175°C) for 5–7 minutes.
