A simple, healthy meal prep salad featuring chicken, bacon, hard-boiled eggs, fresh veggies, and avocado. Whole30 compliant, Paleo-friendly, and dairy-free, perfect for make-ahead lunches that stay fresh throughout the week.

  • 1 pound boneless skinless chicken breast
  • ½ tbsp avocado oil
  • 1 tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ¼ tsp black pepper
  • 5 strips cooked bacon, sliced into thin strips
  • 4 cups romaine lettuce
  • 1 cup cherry tomatoes, diced
  • 12 avocados, diced
  • 1 cup cucumber, diced
  • 3 eggs
  • Salad dressing, for serving

Instructions

  1. Cut bacon into small strips.
  2. Cook bacon in a skillet over medium heat until crispy; drain on paper towels.
  3. Season chicken breasts with salt, black pepper, garlic powder, onion powder, and paprika.
  4. Heat ½ tablespoon avocado oil in the same skillet and cook chicken 4–6 minutes per side or until internal temperature reaches 165°F (74°C). Remove, let cool slightly, and slice thinly.
  5. Chop romaine lettuce, dice cherry tomatoes and cucumber, and dice avocados.
  6. Hard-boil the eggs.
  7. Assemble salads in meal-prep containers: start with a bed of lettuce, then add diced veggies, avocado, hard-boiled eggs, bacon strips, and sliced chicken.
  8. Store salads in the fridge and add dressing just before serving to keep greens fresh.
