Easy and refreshing frozen clusters made from mashed strawberries coated in chocolate candy coating and frozen for a crisp, icy treat.

  • 16 oz fresh strawberries
  • 1 tablespoon sugar
  • 16 oz chocolate candy coating

Instructions

  1. Put ripe strawberries in a bowl and sprinkle with sugar.
  2. Mash the strawberries with a fork until broken down.
  3. Spoon 2 tablespoons of the mashed strawberries into six piles on a parchment-lined tray or plate that fits in your freezer.
  4. Freeze the piles for 3 to 4 hours or until solid.
  5. Melt the chocolate candy coating according to package instructions.
  6. Dip each frozen strawberry cluster into the melted chocolate to coat completely.
  7. Place the dipped clusters back onto the parchment.
  8. Freeze again until the chocolate is completely set and firm.

Choose strawberries that are ripe but still firm so the mash holds together when you scoop it into piles., Measure out even 2-tablespoon portions so your clusters freeze evenly and dip easily in chocolate., Make sure the clusters are completely frozen solid (3–4 hours) before dipping to avoid them falling apart or the juices leaking into the chocolate., Use chocolate candy coating or candy melts for best dipping results; if using regular chocolate chips, stir in a bit of coconut or vegetable oil to thin the chocolate and help it set well., Work quickly when dipping so clusters don’t start thawing. Freeze immediately after dipping., Store finished bites in an airtight container in the freezer, layered between parchment paper to prevent sticking., Enjoy within 2 to 4 weeks for best texture and flavor., Let sit 5–10 minutes if a softer chilled bite is preferred; do not refreeze after thawing., Clusters can be made ahead, dipped, and stored frozen until ready to serve.
