  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash baby potatoes and halve them; mince the garlic and set aside.
  2. Rub chicken breasts with olive oil and season with Italian seasoning, salt, black pepper, and red pepper flakes (if using).
  3. Spread the halved potatoes in the bottom of the crockpot.
  4. Arrange the seasoned chicken breasts on top of the potatoes.
  5. Pour chicken broth into the crockpot so it covers the ingredients enough to keep them moist.
  6. Evenly sprinkle the minced garlic over the chicken, then evenly sprinkle the grated Parmesan cheese on top.
  7. Cover the crockpot and cook on low for 6–7 hours or on high for 3–4 hours.
  8. Use a meat thermometer to confirm the chicken reaches 165°F (75°C) and check that the potatoes are fork-tender.
