  • 2 cups cooked chicken breast, diced
  • 3 cups corn kernels
  • 1/2 cup red onion, finely diced
  • 1/2 cup cotija cheese, crumbled
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/2 cup plain non-fat Greek yogurt
  • 1/4 cup light mayonnaise
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Char or roast corn kernels on a grill, in a skillet, or in the oven until golden brown spots develop. If using frozen corn, thaw and dry before cooking to ensure browning.
  2. Sear or grill chicken breasts until golden and cooked through (internal temperature 165°F / 74°C). Let rest a few minutes then dice.
  3. Optional: Soak finely diced red onion in cold water for 5–10 minutes, then drain and pat dry to mellow the flavor.
  4. Seed and mince the jalapeño if using.
  5. Whisk Greek yogurt, light mayonnaise, fresh lime juice, chili powder, cumin, garlic powder, salt, and pepper in a small bowl until smooth.
  6. In a large bowl, combine diced chicken, charred corn, red onion, cotija cheese, cilantro, and jalapeño.
  7. Pour dressing over the mixture and gently fold until evenly coated.
  8. Adjust seasoning with salt, pepper, or additional lime juice to taste.
  9. Cover and refrigerate salad for at least 30 minutes to let flavors meld.
  10. Before serving, gently stir and garnish with extra cotija and cilantro if desired.
