A moist, tender, and perfectly spiced pumpkin bread made with cook & serve vanilla pudding mix, ideal for breakfast, snacks, dessert, or gifting during the Fall season.

  • 5 eggs, room temperature
  • 1 cup oil (sunflower oil preferred; canola or vegetable oil also good)
  • 15 ounces 100% pure pumpkin puree (NOT pie filling)
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 6 ounces cook & serve vanilla pudding mix (2 packages, 3 ounces each)
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 3256F.
  2. Grease five small loaf pans (approximately 5 3/4 x 3 x 2 inches) and set aside.
  3. Beat the eggs in a large bowl.
  4. Add oil and pumpkin puree to the eggs and beat until smooth.
  5. In a medium bowl, combine flour, sugar, vanilla pudding mix, baking soda, cinnamon, and salt. Stir to combine.
  6. Gradually add the dry ingredients to the pumpkin mixture, beating after each addition until just combined. Avoid overmixing.
  7. Divide the batter evenly among the prepared loaf pans and place the pans on a large baking sheet.
  8. Bake for approximately 40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool the loaves in the pans for 10 minutes, then turn out onto a wire rack and cool completely.
