Instructions

  1. Whisk eggs with milk, salt, and pepper in a large bowl until frothy and smooth.
  2. Melt butter in a non-stick skillet over medium heat, pour in the egg mixture, and gently stir until soft and fluffy, about 5–7 minutes; remove from heat before they dry out.
  3. Lightly toast tortillas in a dry skillet or microwave for a few seconds to make them flexible.
  4. Place a warm tortilla on a flat surface, lay a pre-cooked sausage link along one edge, spoon about 1 tablespoon of scrambled eggs on top, and sprinkle with shredded cheddar.
  5. Roll the tortilla tightly, folding the ends inward to enclose the filling.
  6. Wipe the skillet clean, spray with non-stick cooking spray or add a little butter, heat over medium, place roll-ups seam-side down, and cook 2–3 minutes per side until golden brown and crisp.
  7. Serve the roll-ups hot.
